Managing allergen risk is a major obligation for food producers. In Australia and New Zealand, around 90% of food allergy reactions come from a defined group of allergens that must be declared under the Australia New Zealand Food Standards Code.
These include:
Soy, Milk, Egg, Wheat, Fish, Crustacea, Molluscs, Sesame, Lupin, Peanuts, and Tree Nuts (almond, Brazil nut, cashew, hazelnut, macadamia, pecan, pine nut, pistachio, walnut).
Also regulated under the Code:
- Gluten from wheat, rye, barley, oats, or their hybrid strains
- Added sulphites at 10 mg/kg or higher
Both are known to cause serious reactions in sensitive individuals, including those with coeliac disease or non-allergic hypersensitivity.
